Ingredients
4 lbs new red potatoes
1 quart mayonnaise
3/4 jar grey poupon country dijon
8 oz Girard’s red wine vinegar and oil (Girard’s discontinued. find substitute)
8 hard boiled eggs, chopped
2 yellow onions, chopped
Preparation
boil potatoes. Drain and set to dry. Cut up potatoes and let cool. Mix all remaining ingredients. add to potatoes and stir. Best if refrigerated about 8 hours before serving.
