Ingredients

250 g semi sun-dried tomatoes

2 tspns minced garlic

1/4 cup vinegar

1/4 cup sugar

1x tub of spreadable cream cheese

Preparation

Slice the tomatoes into thin strips and place in a small saucepan. Add garlic, vinegar and sugar and stir over medium heat until sugar is dissolved. Simmer for 3 mins and set aside to cool. T make individual servings, mould a sixth of the cheese into a flat mound and pour 2 tbspns of tomato mixture to cover the cheese.To make one platter to share,mould cream cheese into a mound on a flat serving dish and pour tomato mixture over the top to cover the cheese. Serve with crispy flatbread, crackers or corn chips and scoop the cheese and the tomato mixture together. Quick, tasty and always a hit!!
