Ingredients A–
1 onion, chopped finely
3 cloves garlic, crushed
1 teaspoon cayenne
2 tablespoons peanut oil
Ingredients B–
2 tablespoons curry powder
3 large fresh tomatoes (chopped)
1 large can of drained diced canned tomatoes
3 cups chicken stock
Ingredients C–
2/3 cup creamy peanut butter
1.5 lb boneless/skinless chicken, cut into bite-size chunks
Preparation
- Put Ingredients A into a pot. Sautee until translucent.
- Add Ingredients B. Simmer 15 minutes.
- Add ingredients C. Simmer until chicken is done.
- Serve over rice, topped with sour cream, lime wedge, and chopped cilantro.
