Ingredients

1 Cup quinoa, cooked

1 Can lentils (19 oz), drained

2 Clove garlic, crushed

1/2 Cup black olives

1 Teaspoon salt

2 Tablespoon fresh mint, minced

2 Tablespoon fresh dill, minced

1/4 Cup fresh parsley, minced

1/3 Cup green onion, minced

1 green or red pepper, chopped

1 stalk of celery, minced

1/2 Cup feta cheese, crumbled

1 tomato, diced

1/2 Cup chopped walnuts or toasted almonds or sunflower seeds

1/4 Cup olive oil

1/4 Cup lemon juice

Preparation

1.Mix all ingredients in large bowl, adding lemon juice and olive oil last. Add salt to taste.
