Ingredients

2 cups organic sour cream

4 extra large eggs

3 tablespoons sugar

3/4 cup flour

1 teaspoon baking soda

3/4 teaspoon salt

Unsalted butter for the pan

Preparation

  1. Put the five pancake ingredients in a bowl in the order listed then whisk together quickly and lightly.
  2. Heat a square non-stick griddle on low for about 5 minutes to get evenly warm. run the butter lightly over the pan
  3. Using a 1/4 cup measure, ladle the batter, making 4 pancakes at a time. 4 When bubbles start to form then pop, turn the pancakes with a spatula.
  4. Repeat or save any excess batter in the fridge for the next day.
