Ingredients

1 lb salmon (skin on, boneless)

1/4 cup sesame seeds

3 cloves garlic

1 Tbsp Coarse Ground Black Pepper

2 Tbsp Ginger

1 tsp sesame oil

1 tsp Olive Oil

1/4 cup Soy Sauce

1/4 cup Cooking Sherry

Preparation

  • Marinate salmon in cooking sherry and soy sauce for 30 minutes.
  • Prepare sesame crust by combing chopped garlic, ginger, sesame seeds, pepper, sesame oil, and olive oil in bowl.
  • Apply as a paste to marinated salmon.
  • Add additional olive oil to skin side of salmon.
  • Apply olive oil to grill to prevent sticking.
  • Place salmon crust side down on grill for 2 to three minutes.
  • Once crust is seared (dark brown), turn salmon over, and cover the grill (assuming charcoal), and dampen fire. Let cook an additional 5 minutes, or until desired doneness.
  • Garnish salmon with Cilantro leaves, lime and orange wedges.
