Ingredients

1 lb chiken breast, 1/4" slices

3 tablespoons sesame oil

4 ounces mandarin oranges with juice (canned preferred)

1 ripe mango, peeled and diced

1 lb spinach leaves, rinsed

1 tablespoon honey

1 pinch of salt

Preparation

Add 1 tablespoon sesame oil to sautee pan and heat to medium. Add sliced chicken and sautee for 8 minutes or until done. Remove from pan and refrigerate for 1 hour.

In large mixing bowl, whisk together remaining sesame oil, mandarin juice, honey and salt. Toss together mandarin oranges, mango, spinach leaves and sliced chicken.

Divide salad among six bowls.
