Ingredients

1 15 ounce can Mandarin orange segments, undrained

1 tsp. ground ginger

2 cups instant brown rice

1/2 cup Asian sesame salad dressing

3 green onions, thinly sliced

1 8 ounce can sliced water chestnuts, drained and chopped

1/2 cup sliced celery

Preparation

Drain oranges, reserving liquid. Add enough water to reserve liquid to measure 1 3/4 cups. Stir in ginger.

Prepare rice according to instructions, substituting 1 3/4 cups orange liquid for water. Refrigerate cooked rice.

Add dressing, onions, water chestnuts and celery to rice; mix lightly. Gently stir in orange segments.
