Ingredients

1 1/2 # white-fleshed fish

1 1/2 cups lime juice

1 cup vegetable oil

1 cup orange juice (fresh is great)

1 or 2 hot red chiles, seeded and slivered

1 small onion, sliced paper thin

1 clove garlic, minced

salt and pepper to taste

Preparation

Cut fish int 1/2 inch cubes and place in small glass dish and cover with lime juice. It is extremely important that lime juice covers all the fish.

  1. Cover and refrigerate for 4 to 5 hours.

  2. combine veg oil, oj, chiles, onion & garlic. after fish has marinated for 3 hours, add this mixture and mix well. chill at least 2 more hours. add salt and pepper
