Ingredients

2 bonless shad fillets. Ask you fish monger to cut flaps on the meaty side so you can enclose stuffing.

1/4 lb of cornbread, broken into large crumble. I use Whole Foods but you could bake your own

1 cup diced onion

1 cup diced celery

1 stick of unsatled butter

1 tablespoon poultry seasoning

Preparation

In a large skillet melt the butter

Add onion and celery and saute until slightly softened

Add the crumbled cornbread and stir util all butter is absorbed.

Stir in poultry seasoning.

Set aside.

Stuff shad filet with cornbread mixture, dot fish with additional butter (optional) and bake in a 350 degree oven for 1/2 hour or until fish is done.
