Ingredients

1-1/4 cups flour

1/4 tsp. salt

1 tsp. baking powder

4 eggs

1 cup sugar

1 tsp. vanilla extract

3 tbsp. olive oil

1 cup almonds

1 tbsp cinnamon

Preparation

Sift together flour, salt, baking powder & set aside. In another bowl beat eggs until thick then gradually add, while stirring, sugar. Stir in vanilla, olive oil, cinnamon. Gradually add flour mix and nuts. Pour into 2 - 9" loaf pans. Bake at 350 degrees for 35-45 minutes. Cool then cut into 1/2 inch slices. Arrange slices on cookie sheet and lightly brown in 400 degree oven.
