Ingredients

4 C. mashed potatoes

1 egg, beaten

1 lb. ground beef

1 small onion, chopped

1/2 tsp. salt

1/2 tsp. freshly ground pepper

1 T. flour

1/2 C. beef broth

1 C. frozen peas

1 C. carrots, peeled, chopped or grated

Preparation

Set oven at 350 degrees. Grease a 10" pan. Mix mashed potatoes and egg. Spread one half into pie pan. Set aside. Fry meat, add salt and pepper and onions. Stir flour into meat and onions. Cook, stirring constantly for 5 min. Add beef broth, cook stirring until it boils. Stir in carrots and peas. Pour over potatoes in pan. Cover meat mixture with remaining potatoes. Bake 30-40 min. until light brown on top.
