Ingredients

4 cups mashed, cooked sweet potatoes*

1/2 cup sugar

1/4 cup (1/2 stick) butter or margarine

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/4 cup cooking sherry or dry sherry wine

1/2 cup milk

Preparation

Combine all ingredients. Beat until fluffy. Turn into a buttered 1-quart casserole. Bake in a preheated moderate oven (375 F degrees) 45 minutes or until top is flecked with brown. Serve hot with meat or poultry.

*Princella Cut Yams in Light Syrup can be used. Rinse and drain.
