Ingredients

1/2 cup red wine vinegar

1/3 cup olive oil

2 lb shiitake (no stems) caps halved

1,5 cup quinoa

1 lb spinach

8 oz feta

Preparation

Heat broiler. Rack 10 cm below. Whisk vinegar, oil, 1 tsp salt, papper.

Broil mushrooms tossed in half of dressing (~25 min)

Cook quinoa in 3 cups of water + 1 1/2 tsp salt (~15-20 min)

Mix everything + leftover dressing. Serve warm.
