Ingredients

1/2 cup red wine vinegar

1/3 cup olive oil

2 lb shiitake (no stems) caps halved

1,5 cup quinoa

1 lb spinach /any greens

8 oz feta

Preparation

Heat broiler.Put rack 10 sm below broiler. Whisk vinegar, oil, 1 tsp salt and pepper. Broil mushrooms, tossed in half of dressing approx 25 min. Cook quinoa in 3 cups of water +1 1/2 tsp salt about 15-20 min.

Mix everything (+ leftover dressing). Serve warm
