Ingredients
1 1/4 cups flour
1/2 cup sugar
1 teaspoon grated lemon rind
1/2 teaspoon salt
1 stick unsalted butter
2 egg yolk
Preparation
Whisk together four, sugar, lemon rind and salt
Cut in butter until mixture resembles coarse breadcrumbs
Add one egg yolk and mix until dough comes together in a ball
Refrigerate for at least 30 minutes if the butter was softened beforehand or if the mixture has warmed
Spread evenly on bottom of greased pan. Prick thoroughly with a fork.
Bake at 400 degrees for 18 to 22 minutes
Meanwhile, whisk second egg yolk and a pinch of salt
After crust is baked, use brush to apply egg yolk glaze
Return to oven until the egg glaze sets - 1 to 2 minutes.
