Ingredients

1/3 cup soymilk

1 tsp lemon juice or cider vinegar

1 tsp vanilla

3/4 cup whole wheat pastry flour

3/4 cup unbleached all-purpose flour

3 Tb sugar or sucanat

1-1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/4 tsp nutmeg (or 1-1/2 Tb orange zest)

1/3 cup Spectrum Spread

Preparation

Combine soymilk and lemon juice. Add vanilla.

Mix dry ingredients together in a large mixing bowl.

Cut in Spectrum spread with fork to create coarse crumbs. Add wet ingredients and knead together to form a dough. Pat into 6 cakes. Sprinkle with sugar.

Place on cookie sheet and bake at 425 degrees F for 12 minutes.
