Ingredients
Chicken breasts – bone in skin on
cooking onions cut in 6ths
parsley stems
Preparation
Put chicken breasts skin side up in a large pan. Add onion and parsley stems. Add water to just cover.
Bring to a boil. Simmer 40 min.
Add salt and pepper.
Cool chicken in cooking water.
Skim off hardened fat. Remove meat and discard skin and bones. Use a fork to shred chicken meat. Add a little broth to keep moist.
