Ingredients

4 c shredded swiss chard

3 fresh beets, peeled and cubed

1/2 c shelled pistachios

1 tbsp EVOO

1/8 c balsamic vinegar

1/8 c fresh orange juice

kosher salt & cracked pepper

Preparation

  1. Preheat oven to 375. Line a baking sheet with foil. Toss beets with EVOO, sprinkle with salt and pepper. Roast for 30 min.

  2. Toss beets with swiss chard, pistachios, vinegar, and orange juice.
