Ingredients
1 1/2 lbs raw, peeled & deveined shrimp
1/2 red bell pepper and 1/2 yellow bell pepper, seeded and sliced in 1/4 inch strips
1/2 cup olive oil
1/2 cup red wine vinegar
1/2 cup chopped red onion
1-2 tsp salt to taste
10 turns of the peppermill
3 tblsp fresh grated ginger
1 large avocado peeled and sliced
3 tbls chopped fresh dill
Preparation
Blanch the bell peppers in boiling water just until tender-crips, about 1 1/2 minute. Put on plate and cover to keep warm.
Heat olive oil and vinegar in large frying pan. NOTE: cover partially with lid while heating, it will spatter A LOT at first.
Add shrimp, onion, salt, pepper and ginger, cook on med stirring often, about 2 minutes.
Add bell peppers, stir, then add avocado. Stir gently for approx 1 minute.
Place on platter and sprinkle with dill.
