Ingredients
2 1/2 lbs raw peeled, deveined shrimp
1/4 c diced sweet onion
2 T olive oil
4 oz softened cream cheese
4 green onions, finely chopped
1 celery rib, finely chopped
1 c crumbled bleu cheese
1 c mayo
1/2 c sour cream
2 tsp chopped fresh parsley
2 tsp lemon juice
1 tsp Dijon mustard
1/2 tsp salt
1/2 tsp pepper
Preparation
Sauté onion in hot oil for three minutes. Stir in shrimp, cooking just until pink. Transfer to bowl, and let stand 15 minutes. Chop shrimp and return to bowl
Stir in remaining ingredients. Chill.
Serve with raw vegetables, crackers, and/or bread slices.
