Ingredients

2 T butter

3 T curry powder

1/4 C chopped onion

1/4 C chopped celery

1/4 C chopped red or green bell pepper

1/4 t grated nutmeg

1 C white wine

1 C papaya nectar

1 lb raw shrimp, peeled and deveined

1 lb whole cashews

Preparation

Melt butter in 2 qt saute pan on med heat. Add curry powder, saute 1 min, add onion, celery, bell pepper and nutmeg cook until tender. Add wine, nectar and shrimp. Simmer on low for 20 min or until thickens. Can add cornstarch to thicken.
