Ingredients

2 T. vegetable oil

1/2 C. golden raisins

1/2 C. julienne strips red bell pepper

1 6-oz. pkg. fresh baby spinach leaves

1/2 tsp. salt

1/2 tsp. pepper

1 lb. cooked, peeled, deveined med. shrimp, thawed if frozen

3 C. hot cooked medium or long grain white rice

1 C. crumbled feta cheese with basil & tomatoes (or plain)

toasted pine nuts or sliced almonds

Preparation

Heat oil in lg. nonstick skillet over med. heat. Add raisins and bell pepper; saute 1 min. Add spinach, salt and pepper; toss until spinach is just wilted. Add shrimp; saute 30 sec. Add hot rice and feta cheese. Toss all ingredients until heated through and cheese is soft and creamy. Top with toasted nuts, if desired.
