Ingredients

1 lb cleaned medium or large shrimp. 4 plum tomatoes skinned

deseeded

and chopped. 30 basil leaves julienned. 3 cloves garlic minced. 8 ozs. tomatoe and basil feta cheese. Salt and pepper at your discretion. 1/4 cup extra virgin olive oil. 2 cups rice.

Preparation

Saute garlic and shrimp in oil about 2 or 3 minutes (just enough time for shrimp to turn pink). Pour shrimp into casserole dish, cover with tomatoes, basil, and sprinkle feta cheese over top. Bake until cheese starts to brown. Serve over rice or pasta
