Ingredients

3 slices bacon

1 med. red bell pepper diced

1 small onion diced

1 small bunch scallions

1-2 lbs. of shrimp (peeled and deveined)

1 cup of polenta or grits

4 cups of chicken stock

1/2 stick of butter

1/2 cup sharp cheddar cheese

Preparation

Fry the bacon until crispy and remove from skillet. Reserve bacon. Lower heat to low and add the pepper and onion. Allow to cook 5-10 minutes until soft. Meanwhile bring chicken stock to a boil. When it has boiled, add the polenta, whisking as you add. Lower the heat and let it simmer, stirring frequently. Add the shrimp to the veggies, and cook about 8 min. until opaque, and remove from skillet. When the polenta has reached desired consistency, add the butter and cheese, and season with salt and pepper to taste. Put about a cup of grits in a bowl and spoon the shrimp mixture on top. Add some reserved bacon and scallions to garnish.
