Ingredients
1 1/2 lbs. Shrimp, peeled, deveined and chopped
1/4 cup celery, finely diced
1/4 cup onion, finely diced
1 cup mayonaisse
2 (8 oz) packages Cream Cheese, at room temperature
1 (8 oz) can tomato soup
2 tablespoons prepared horseradish (or more if you like it spicy)
1 tablespoon non-flavored gelatin (or 1 indivial 1 oz. pkg)
non-stick spray
4 or 6 cup bundt pan
Cherry tomatoes & Curly parsley for garnish (optional)

Preparation
Combine shrimp, celery, onion & mayonaisse in a glass bowl, mix to combine and refrigerate.
In microwave safe bowl, combine, cream cheese, tomato soup, horseradish. Mix to combine. Cover with plastic wrap and microwave for 3 -4 minutes on high. Mix well. Return to mircwave for 3 - 4 minutes on medium. All microwaves are different. Mixture should be melted and combined well. This can be also prepared with a double-boiler method. Cool mixture to room temperature.
Add gelatin to cream cheese mixture and mix thoroughtly.
Combine cream cheese mixture with shrimp mixture.
Spray bundt pan with non-stick spray. Pour in mixture and smooth the top evenly. Cover with plastic wrap and chill 8 hours or overnight.
Flip onto serving platter, garnish as desired and serve with water crackers.
