Ingredients
2cu fresh corn kernels or one 10oz package frozen corn, thawed
1pt cherry tomatoes, quartered
1lb peeled and deveined large, cooked shrimp
1/2cu shelled, roasted pumpkin seeds
6 scallions (white and light green parts), thinly sliced
1/4cu fresh orange juice
2T fresh lime juice
2t agave nectar (or honey)
1t ground cumin
1T olive oil
3/4t sea salt
1/4t black pepper
Preparation
in a large bowl, combine the corn, tomatoes, shrimp, pumpkin seeds, and scallions. in a separate bowl, whisk together the orange and lime juices, honey, cumin, oil, salt and pepper. toss w/ the shrimp mixture.
