Ingredients
2 tbls butter
½ cup onion, diced
4 to 6 tomatoes diced or 1 28 oz can of diced tomatoes
½ cup white wine
1 tsp dried oregano
Salt and pepper to taste
4 oz crumbled feta
1 lb shrimp, peeled
Preparation
Melt the butter over medium heat, add the onions and cook until tender. Next add the tomatoes, white wine, oregano, salt and pepper. Let mixture simmer for 10 to 15 minutes stirring occasionally. Stir in the feta. One it has melted, add the shrimp and cook until shrimp are completely cooked, three to five minutes.
Serve in a bowl with a nice crusty bread or over pasta.
