Ingredients

2 T vegetable oil, divided

12 oz peeled deveined small shrimp, thawed if frozen

8 scallions, thinly sliced

2 garlic cloves, chopped

1 T finely chopped peeled ginger

3 C cold cooked white rice

2 large eggs, beaten to blend

1/2 C frozen edamame, thawed

1/2 C frozen peas, thawed

3 T low sodium soy sauce

2 T rice vinegar

1 t toasted sesame oil

Preparation

Heat 1 T oil in electric skillet cook shrimp (3 minutes). Remove to plate. Heat 1 T oil in same skillet, add scallion garlic & ginger. Cook while stirring one minute. Add rice and stir to coat about 2 minutes. Push rice to one side and add eggs and cook, stirring and working into the rice mixture, 2 minutes. Add edamame, peas, soy sauce, vinegar, sesame oil, and shrimp. Cook, tossing constantly until heated through. Top with scallion greens.
