Ingredients

1-1/2 cup all purpose flour

3/4 teaspoon salt

3/4 teaspoon baking soda

1/4 teaspoon cayenne pepper

1/4 teaspoon dry mustard

1 cup cooked shrimp, chopped

1/2 cup frozen corn kernels,

thawed

2 scallions, minced

2 tablespoons chopped

pimentos, drained

1 large egg, lightly beaten

3/4 cup buttermilk (approx)

Vegetable oil for frying

Preparation

Whisk the dry ingredients together in a medium bowl. Stir in shrimp, corn, pimentos, scallions and egg. Add 1/2 cup buttermilk in; then enough to to make a stiff batter. Don’t overmix.

Pour oil in a cast iron skillet, 1 inch deep and heat oil to 350 degrees over medium heat. Working in small batches, drop batter in by heaping teaspoon fulls and fry fritters until they are golden brown, flipping them once. This will take about 2 to 3 minutes. With a slotted spoon or spider, remove fritters from oil and drain on wire rack set over paper towels. Serve them while still hot with your choice of dipping sauce. Enjoy!!
