Ingredients
1-cup veggie broth
1-cup water.
1-cup grain (brown rice, red rice, and mixed grains)
4-6 shallots
2-4 jalapeno peppers
Half bunch green onion
1 lb jumbo shrimp (peeled)
4-6 tablespoons ginger syrup
2-4 tablespoons red curry paste
1-tablespoon fish sauce
¼ cup shrimp shell stock
Preparation
In a heavy pot add 1-cup veggie broth & 1-cup water. Add 1-cup rice mixture. Add lightly copped shallots, jalapeno and green onion. Bring to boil then simmer on low.
Place shrimp shells in ¼ cup water boiled water. Add peeled shrimp to pot Add ginger syrup, add red curry paste, and add fish sauce and shell stock to pot. Cover and place in oven.
Let bake for about 10 minutes. Turn off oven. Let sit for about 5 more minutes. Remove and serve.
