Ingredients
2 lbs fresh shrimp (large or jumbo)
1/2 lb butter
1/2 cup olive oil
4 cloves crushed garlic
1/2 cup shopped parsley
4-5 lemons juiced
1 tsp tarragon
1/3 cup chopped scallions
salt and pepper
large french bread
Preparation
Peel shrimp except for the last segment and tail; wash under cold running water and dry on paper towels. Melt butter, combine with olive oil, garlic, parsley, lemon juice, tarragon, and scallions. In a low-sided baking dish that is broiler-proof, place the shrimp in one layer, pour sauce over shrimp and let sit a few hours at room temperature. Preheat oven to broil. It should be very hot. Add salt and pepper to shrimp. Place shrimp under broiler (2" from broiler) and cook about 4 minutes on one side. Turn shrimp over, cook about 4 minutes on other side. The sauce should be bubbly, the shrimp opaque (whitish-pink), and the tails just beginning to brown. Serve immediately with french bread.
