Ingredients

8 cloves garlic, minced

1/4 c lime juice

20 large shrimp, peeled

1/4 c olive oil

1/2 c onion, chopped

4 ripe tomatoes, chopped

2 canned chipotles w/1 TB sauce

1/2 c cola

1/4 tsp oregano

Preparation

In a bowl stir garlic, lime juice. Add shrimp & season. Let stand at least 5 min. In a skillet on med-high heat, heat oil. Add onion & saute until golden. Add tomatoes & cook 1 min. Using a slotted spoon, transfer tomato mixture to blender. Reserve oil in pan. Add chiles, cola & oregano to blender. Process. Remove shrimp from marinade & pat dry. Heat pan w/oil. Cook shrimp in 2 batches. Remove shrimp. Return pan to heat & add sauce. Cook until thickened, 5 min. Stir in shrimp & cook 2 min. more.
