Ingredients

2-3 garlic cloves, minced

10 fresh green peppercorns, chopped

2 tablespoons Extra Virgin olive oil

2 lbs fresh Gulf Shrimp, cleaned and deveined

8 oz. Lo Mein noodles

6 oz. Baby Greens (argula, chard, baby spinach)

Fresh ground pepper

Salt

Preparation

  1. Prepare Lo mein noodles as instructed. 2.Drain but retain 1/2 cup of the water used from noodles. Set aside. 3.Heat 2 tablespoon of olive oil in large skillet.
  2. Sautee peppercorn and garlic until fragrant on medium heat.
  3. Add shrimp.Cook 4 minutes on med-high heat.
  4. Add pasta and water. Cook 2 more minutes
  5. Add baby greens and cook 1 more minute.
  6. Season with pepper and salt to taste. 8.Serve immediately
