Ingredients
Whole Wheat Tortillas
1/4 cup extra virgin olive oil
1 onion, sliced
sea salt
pepper
one 14.5 oz can of diced tomatoes
1/2 tsp. crushed red pepper flakes
2 cloves of garlic, chopped
1 pound of shrimp (or 4 small tilapia fillets)
Preparation
Heat 2 tablespoons of olive oil, add onion, season with salt and pepper and cook until browned
Add the tomatoes, increase the heat and cook until the liquid has evaporated
Remove the tomato mixture to a bowl and (in the same skillet) heat 2 tablespoons of olive oil. Add the shrimp (or tilapia), red pepper, and salt and pepper. Cook until shrimp is done
Place the tomato mixture over the shrimp. Spoon mixture over tortillas - top with any other toppings you’d like, sour cream, avocados, cabbage, lettuce, etc.
