Ingredients
Frozen cooked shrimp, 31-45 per pound size, thawed.
Cocktail sauce: fresh or jar of store bought.
Feta cheese, 8 ounces.
Large bunch of large fresh spinach leaves, washed and dried.
Preparation
- Lay spinach leaves on prep area, vein side up.
- Place one shrimp, one small piece of cheese, and a small dollop of cocktail sauce on the non-stem end of each spinach leaf.
- Roll each spinach leaf up and over the shrimp, cheese and cocktail sauce.
- Place on serving plate stem side down to hold roll in place.
- This recipe may be prepared 2-4 hours before consumption.
