Ingredients
2 tbsp butter
1/2 c chopped onion
1/2 c chopped red pepper
1 clove garlic, minced
2 small carrots, chopped
2 celery stalks, chopped
1 c okra, uncooked
1 # smoked sausage
1 small roma tomato, diced
2 tbsp fresh cilantro
2 tbsp fresh parsley
1/4 c sherry
1 # uncooked shrimp, peeled and deveined
One box Zataran’s red beans and rice
4 oz sliced mushrooms
Preparation
Heat butter and add onion, pepper, garlic, carrots celery and okra. Simmer 30 minutes. Add sausage, tomato, cilantro, parsley and sherry. Simmer 10 min more. Prepare rice as directed, but stop before it is dried out. Add to skillet with mushrooms, stirring constantly about 10 min more until slightly thickened.
