Ingredients
1 1/2 pounds shrimp, peeled
3 Tbs lite butter
4 garlic cloves, minced
1/4 c. fresh lemon juice
3 Tbs chopped fresh parsley
1/8 tsp red pepper flakes
salt & fresh ground pepper
whole wheat pasta
Preparation
Cook pasta.
Rinse shrimp under cold water and pat dry. Season with salt & pepper.
Heat margarine & garlic in large skillet over medium heat until melted & bubbly, 1-2 minutes. Add shrimp & stir to coat.
Add lemon juice, parsley & red pepper flakes; cook, stirring occasionally until shrimp are pink ~2 minutes; do not overcook. Remove from heat, season with salt & pepper, and serve hot over pasta.
