Ingredients

3 medium diced and peeled sweet carrots

3 stalks diced celery

1 diced medium yellow onion

3 cloves minced garlic

3/4 stick unsalted butter

1 cup plain all purpose flour

6 cups chicken broth

1 cup heavy cream

1 tsp salt

1 tsp black pepper

spash of sherry

1 1/2 pound small or medium chopped shrimp

Preparation

Sweat carrot, celery, onion and garlic in butter till soft (10-15 minutes)

Add flour and cook, stirring, for 3 to 4 minutes.

Gradually stir in chicken broth and heavy cream.

Add salt, pepper, and sherry.

When liquid turns creamy add in shrimp and simmer for 3-4 minutes.
