Ingredients
SAVORY & SIMPLE SHRIMP TOAST
1lb cleaned raw shrimp
1 small onion, peeled & quartered
1 large egg, slightly beaten
1 teasp salt
1/2 teasp pepper
2 teasp flour
1 loaf white bread (14 slices) (, crust removed, cut into triangles
shortening (1/2 large can)
Preparation
Place shrimp and onion in food processor with cutting blade, pulse until pastlike (approx. 1 min), remove and place in medium bowl. Add salt, pepper, egg and flour. spread thin layer of shrimp paste on bread triangles. Heat shortening in 2 qt saucepan, place four pieces in pan, brown on both sides quickly, drain onto brown paper bags or paper towels. Bake in a 350 oven for 10 mins. Serve with duck sauce. Can be frozen before baking.
