Ingredients

1 lb medium shrimp, peeled and deveined, leaving the tail on

3 tbsp olive oil

3/4 cup green onions, chopped

1 lemon, halved

1/2 tsp salt

1/4 tsp cayenne pepper

1/2 cup dry white wine

1 tbsp fresh tarragon, chopped

1 tbsp garlic, chopped

1/4 cup bourbon

Preparation

Butterfly the shrimp. Heat olive in a large skillet over high heat and add the onions and the garlic. Saute for a moment and then add the shrimp. Cook for 2 more minutes. Season to taste with salt and pepper and saute 1 minute longer. Add the lemon juice, white wine, and bourbon and continue cooking until well done, 2 minutes longer. Add the tarragon and stir to blend flavors. Serve immediately
