Ingredients
1 14 1/2 oz can diced tomatoes
1 28 oz can crushed tomatoes
1 pkg orzo(about 2 cups)
2 tbl olive oil, divided
1 10 oz pkg frozen chopped spinach, thawed and wrung dry
2 cloves garlic, chopped
2 lb. large shrimp, cleaned & deveined
1/2 lb feta cheese, crumbpled
3 -4 tbl chopped fresh parsley
1 tsp dried oregano
salt & papper to taste
1 tsp dried oregano
Preparation
Grease 11 X 15 pan. Preheat over to 350. cook orzo according to pkg instructions, drain & toss with 1 tbl olive oil and stir in spinach and diced tomatoes. Pour into prepared pan. Saute garlic in 1 tbl olive oil and add shrimp. cook shrimp until just pink- add crushed tomatoes and simmer until slightly reduced. stir in oregano, salt and pepper. Pour over orzo & sprinkle with feta and parsley. Bake for 15 minutes until heated through.
