Ingredients
1-1/2 lb peeled ,deveined shrimp
1-2 tbl olive oil
4-6 lg ripe tomatoes diced
1 med onion chopped
1-2 cloves crushed garlic
3tbl chopped flat leaf parsley
1 cup crumbled feta
crusty french or italian bread
salt & pepper to taste
Preparation
in lg skillet saute onion in olive oil over med heat until softened but not really browned. add garlic saute 1 min. add tomatoes and simmer over low heat until sauce has thickened somewhat 15-20 min. add shrimp and simmer until cooked through and opaque. stir in feta and simmer 1 minute until heated through and just beginning to melt a bit. season with salt and pepper to taste. (very little salt will be needed due to the feta) sprinkle with parsley. serve in flat soup bowls with bread to mop up sauce. goes well with a tossed salad and red wine. fruit for dessert
