Ingredients

2tsp olive oil

1 pound medium raw shrimp peeled

3 large tomatoes about a pound crushed

1/4 cup torn basil leaves

4 ounces feta cheese

Preparation

  1. Heat olive oil in a large skillet over medium high heat.
  2. Add shrimp and saute till pink about 3 minutes
  3. Crush tomatoes in a bowl with your hands. add to pan with basil and toss.
  4. Serve over pasta or with bread and sprinkle with feta cheese.
