Ingredients
3T olive oil
2-3 cloves garlic-sliced
1/4tsp salt
1tsp coarse ground black pepper
3 cups flat Italian parsely-chopped
1-1 1/2 lbs fresh steamed shrimp
1 cup parmesean cheese
2 cup white wine (chardonnay)
1 lb linguini
Preparation
- preheat oven to 350F
- On the stove top, heat olive oil at medium heat in large frying pan
- Add garlic, salt and pepper to oil. Remove garlic bits from oil once they turn brown.
- Add parsley to oil and simmer for 1 min. Stir in shrimp and half of cheese.
- Slowly mix in the wine and rest of the cheese. Cook on Med-Low heat for 10-15 minutes constantly stirring. Sauce should be very liquidy.
- Place sauce in covered dish and put in oven. Make sure to keep the liquid with the shrimp.
- Start to boil the water and cook linguini until al dente.
- Strain pasta and remove sauce from oven.
- Pour sauce over pasta in a large bowl and mix well. Sprinkle with parmesean cheese before serving if desired.
