Ingredients
4 ounces reduced fat cream cheese, softened
1 Tbsp reduced fat Italian dressing
1 Tbsp snipped basil
1 Tbsp grated parmesan cheese
4 (6 inch) whole wheat tortillas
1/2 cup mixed baby greens
1 cup canned small white beans, rinsed and drained
1/4 cup diced roasted red bell peppers
2 Tbsp sliced black olives
Preparation
Mix together the cream cheese, Italian dressing, basil and parmesan till well blended. Spread evenly on 1 side of each tortilla. Top with the greens, beans, bell pepper and olives. Roll up each tortilla tightly. Wrap in plastic wrap. Chill overnight, then pack for school lunches along with a piece of fruit for a nutritious and delicious lunch.
