Ingredients
2 cups AP flour
1 1/2 tsp baking soda
1/2 tsp salt
4 overripe bananas
1 cup sugar
2 large eggs
1 tsp vanilla
1/2 cup chopped pecans
1/2 cup chocolate chips
1 1/2 sticks unsalted butter melted and cooled
Preparation
Preheat oven to 350 degrees and grease a 9x5 loaf pan Mash 2 bananas leaving them with some texture. Whip the remaining bananas with the sugar until light and fluffy cream is formed. Add the melted butter, eggs and vanilla and beat well. Add the flour just until combined (do not overbeat) Fold in the mashed banana, chips and nuts. Bake approx 1 hour 15 minutes for the loaf, 35 minutes for larger muffins and 25 minuts for cupcakes.
