Ingredients
1 1/2 cups all purpose flour
2 1/2 teaspoons baking powder
1 teaspoon kosher salt
3 Tablespoons sugar
1 cup buttermilk
3 Tablespoons water
1 teaspoon vanilla
1/2 stick melted butter
3 eggs, beaten
Preparation
Mix all ingredients together in order given, in a 4 quart bowl or 4 quart measuring cup.
Heat griddle to 325 degrees. Spray cooking surface with butter cooking spray. Use an ice cream or cupcake scoop for consistent size pancakes. Each scoop makes an approximately 3" pancake. Cook until bubbles appear over pancake surface, then flip and cook for another minute or until golden brown.
Serve warm with butter and syrup. You may want to add banana slices, coconut, chocolate chips, marmalade or whipped cream as a garnish for these pancakes.
