Ingredients

4 cups diced poached chicken breast

1 stalk celery, diced to very small pieces

2 tablespoons almond slivers, chopped into small pieces

4 finely diced scallions

1 to 2 teaspoons finely chopped dill

1 to 2 tablespoons finely chopped parsley

3/4 to 1 cup mayonnaise

2 teaspoons lemon juice

1/2 teaspoon spicy mustard

1/2 teaspoons honey dijon dressing

1 to 2 teaspoons salt

ground black pepper to taste

Preparation

In large bowl toss together chicken, celery, almonds, scallions, dill, and parsley.

In small bowl whisk together mayo, lemon juice, the 2 mustards, salt, and pepper.

Add mayo mixture to the bowl with the chicken and mix until combined.

Refrigerate and serve cold.
