Ingredients
Cake:
2 cups flour
3/4 - 1 cup sugar
1 egg
1/3 cup of oil (I use canola)
milk (add to desired consistency - I use skim)
Topping:
Brown sugar
Cinnamon (optional) - add just enough to desired flavor
Pinch of flour
Butter (we use light butter - Land of Lakes with canola oil)
Preparation
Cake: Mix all the ingredients in a bowl with a spoon until you can easily form a loose dollop onto a baking pan.
Topping: Mix until it’s just a dry/crumbly mix that is fairly easy to sprinkle on top of the dollops. I put a concentration of the topping in the center and only lightly sprinkle the remaining top of the dollop. When it bakes, there will be a nice sunken topping crater to work your way toward from the edge.
Bake at 400 degrees until very lightly brown on top.
Slather with butter and enjoy while still fairly hot. These are best when eaten right away.
